We went at Christmas one year. We did magic kingdom xmas eve. Got there for rope drop, did some rides before it got really busy, then just enjoyed the atmosphere until the parade. Watched the parade and then left. We also had booked the plaza for a sit down lunch. It's one of the cheapest restaurants and it was nice to take a break away from the crowds.
Xmas day we went to discovery cove, which was lovely but very surreal sitting amongst palm trees drinking a cocktail on xmas day. This I would highly recommend even without a dolphin swim.
Boxing Day was animal kingdom, again for rope drop. We rode Everest about 5 times in a row that morning. It again got busy around midday. I had booked tucker house for sit down lunch. Again a nice break from the crowds and you see some characters. We then left around 3 and spent afternoon at the pool.
We did have some cold days where we needed jumpers and jeans, so don't forget to pack some warmer clothes. One family at our hotel didn't have any and had to buy some.
On that note, shopping was good at the outlets, lots of holiday discounts.
