Day trip to St Augustine, bit of history, nice unique shops and places to eat. Take the tour first.

Also what about a state park? Never tried one myself but it is my list for when we return.

Also Winter Park is worth a visit for an afternoon

We went to 2 state parks on our last trip they were fab did Kayaking with a guide and saw loads of wildlife, gators, manatees and loads of birds etc. Also while swimming in the springs a manatee and her baby swam up to us and the baby was nibbling my sons shorts amazing day although the springs are really cold.
Also had a fab day at a giraffe ranch hand feeding them and Rhino's. There is loads to do apart from the parks. Some lovely beaches down on the coast.

I do quite like the idea of going to a state park sounds quite peaceful
