Chicken traybake!

I made one for dinner and it was tasteless, it had chicken thighs and breasts, fresh thyme, olive oil, smoked paprika, balsamic vinegar, rosemary, 4 garlic cloves, new potato’s, black pepper, sea salt, tomato’s, red onions, yellow and green peppers. It was a Jamie Oliver recipe and I added potatoes and rosemary, we had warm crusty bread and salad and that was the best bit. How do you make your chicken traybake?

I like chicken thigh (skin removed) with tinned chopped tomatoes, sliced red onions, feta, black olives & sundried tomatoes (salt & pepper )
Served with salad or crusty bread

I also did a ‘cake boss’ recipe which was really nice.
Chopped, peeled potatoes (roast potatoe size) drizzle with olive oil and bake for around 20 - 30 mins when potatoes are softer and browning. Then on top of the potato’s chicken thigh (I use skinless & boneless) sprinkle frozen gardens peas on it, sliced onion a tin of chopped tomatoes and add about 500ml of chicken stock. (Add salt & pepper to taste) then bake for 45 mins.
This is so tasty! And a full meal in itself

I ‘cheat’ & add Dolmio traybake sauces! Always put cherry tomatoes on the vine on the top. Tastes more Italian than when I make the sauce from scratch.

I marinate the chicken in the olive oil rosemary thyme vinegar paprika
Etc over night I remove the skin before marinade though and add more garlic and spray the baking dish with 1cal garlic oil
Oh an£ in a separate dish marinate the veg in half the mix

I haven't made a chicken traybake for years as we mainly eat vegetarian now, but when I did I used to add chorizo for extra flavour.

I always add 2 chicken stock cubes mixed with about 250ml water and pour it over the top and I find that adds flavour

Always use chorizo!

We often have the Hairy Dieters Spanish chicken, plenty of smoked paprika and chorizo
