Mobile Vegetarians/Vegans recipes and ideas help needed

Looking to drastically reduce our meat intake 😄

Looking for some great recipes, love my slow cooker/batch cooking.

But no tofu, I try to keep soy intake as low as possible.

I tried to go pescatarian last year but failed due to lack of imagination. Deff going to try and reduce our meat intake this year.

Linguine with almond cream sauce with broccoli
Five bean chilli
Pea and asparagus risotto

This is our favourite veggie/vegan meal, you really wouldn't know it was veggie

You cant go wrong with risottos and pasta dishes.
Our best risotto flavours are: Asparagus, pea and spinach, with parmesan.
Roasted butternut squash with stilton and sage
Roasted Veg
Cheesy sweetcorn with chilli
Mushroom and tarragon (tend to top it with chicken though lol)

Haven’t eaten meat for nearly 40 years and never had so much choice. Love the Richmond sausages and also a meat free mince I get in Sainsbury’s that I can’t remember the name of! Our local health food shop sells an amazing vegan pate and black pudding and even my once meat loving husband went vegetarian four years ago and hasn’t looked back!
Edited to add-it’s the meatless farm company meat free mince and believe its on offer at the moment

My go to lunch atm is vegetarian

wrap- either Tesco multi seed or Tesco sweet chili
Hummus - either Tesco plain hummus or Tesco sweet chili

I alternate the wraps with the hummus, the multi seed with the sweet chili Hummus and the sweet chili wrap with plain hummus.

The filling is always the same
Fresh spinach leaves
1/4 avocado sliced
1/2 tomato diced
some diced red or green or yellow pepper
sprinkle of pine nuts

We go to Centre Parcs on Monday so I'm using up what's floating about the fridge and the big request has been this
Chop an onion parsnip carrot turnip (Sweed) and cook in a tin of chopped tomatoes till soft i season with pepper garlic chilli flakes
Put in a pie dish top with garlic mash or par boiled sliced potatoes top,with grated cheese optional stick in a hot oven 180 /200 depending on your oven bake 15/20 mins again on your oven serve with in our house red lobster biscuits or crusty bread also really nice with a winter salad i.e. Grated red cabbage onions sweet heart cabbage with ranch dressing or very sloppy mayo ( my sloppy mayo that's what they call it half a cup of mayo to three quarters of a cup of very thin low fat yougurt or sour cream
The potato topping sometimes has some little bits of grilled crispy bacon in or chopped olives if you like them it's amazing
