My dad is a coeliac, we spent 3 weeks at OKW 2015 with DDP.
My dad is also a picky eater...
We had no issues at all finding GF on site.
At table service restaurants we had listed it on the ADR anyway, and just mentioned it again on arrival. Each time the chef came out to discuss options, and in the case of a buffet walked around with my dad to show him in person.
You will be pleasantly surprised if you stay on site, really it was so easy.

Hi, I'm coeliac and we went on the qsdp last summer, I was in complete heaven!

It was fabulous, I couldn't believe the options available for me. All chefs came to talk to me to check what I wanted. To be able to sit and eat burgers / nuggets / pizza with rest of my family with no hassle was brilliant.

I did do my research before I went though and knew which restaurants catered more easily for me.

Have a read of glutenfreedairyfreewdw/ it helped me.

I listen to a podcast called 'the Disney duo' they are both coeliac and stay on site at Disney. It's worth a listen. Lots of tips about where to eat. Disney seem to cater brilliantly

I did a food report of our trip last year although I'm not celiac gluten does upset my stomach so I try to avoid it as much as possible. There are details of gluten free meals both on and off site in my report and there is an amazing variety although desserts seeemed to be predominantly chocolate brownies

If you go to Publix they have a huge gluten free section. Friends of ours from Bristol fill a suitcase with things to take home, that they can't get in the UK

Here's a photo from the website. Our Publix looks similar.
