Another wee thing to throw into the equation for me, how much time do I actually plan to spend on Disney property? In a two week period I'll definitely be doing Universal and spending whole days, so will eat there. On those days my DDP will be wasted, best I can do is bring along a few snacks.

However I may be doing a week onsite and a week off, so would obviously concentrate on Disney first. But if budget allows I'd really like to stay onsite the whole time, but hire a car the second week to do Universal, shopping malls, etc. In this scenario QSDP would be more than enough.

Hope that makes sense!

Even if not doing disney every day you can double up some days eg character breakfast and TS dinner or do 2 credit signature meals/shows.

A mix of some character breakfasts, a signature, a lunch, a show like hoop de doo etc.

So on ddp for example
Day 1 - MK you know you will be up at crack of dawn 8am adr crystal palace - rest of day free to eat QS
Day 2 - AK, always hot in this park so make an adr for lunch in a/c at yak and yeti
Day 3 Epcot - feeling more on US time, book at TS in world showcase for tea
Day 4 Water park nice signature dinner
Day 5 universal offsite eating
etc

You need to know what parks to go to to book fp anyway.

Also easier to make adr and cancel. Personally I would find it more hassle not to make adrs and wait to eat or have to eat at odd times.

Your DDP wouldn't be wasted really. You can use the credits however you want and some restaurants take 2 credits. We book a few signatures so having to pay for food at Universal makes that easier. Or you could book a TS breakfast and dinner in the same day.
