Think we might buy a couple of cheap booster seats and leave them there so we've got more room to bring goodies back

I would personally buy cheap booster seats here and leave them, who are you flying with? We booked car hire and flights with BA as a package and most of the time the car hire works out free or very cheap which includes insurance and extra driver and they allow children a car seat and stroller as extra luggage so you can get a car seat bag and take them to oversized drop off so not losing any space in your cases, not sure on other airlines.
