got some nice cutlets from our butcher the other week, did half of them then, but froze the other half for another meal...

so i made a marinade out of butter, garlic and rosemary, and put one bag in the fridge, and one in the freezer.

this was the meal we had on saturday. got the bag out the freezer (as well as a bag of belly pork strips) and dropped into the sous vide water bath and cooked for a few hours at 144f. removed the lamb, then cranked the belly pork up to 165f for a few more hours, then cut the pork into chunks, dredged in seasoned cornflour, and deep fried to crisp them up nicely.

the (now cold, but fully cooked) lamb went into a pan in the oven with some par-cooked baby potatoes (5 mins in the microwave in a lidded tub) along with some lard, garlic, and the butter/rosemary marinade for 20-30 mins to brown up and crisp the fat a bit.






and heres the spicy japanese bbq rack of lamb we had at yashin house in kensington recently... making something similar is my next goal!

Depends on the butcher and depends on the supermarket.

Many butchers buy prepared meat from large wholesalers.

Roast lamb is my favourite, I usually get one around Christmas time for £18 in sainsburys. Maybe them days are gone because I haven’t cooked it in a while.

I like lamb shoulder, Tesco had it on half price, I ordered a half shoulder and as they were out of stock they substituted my £4.25 half shoulder with a full shoulder that should have cost £14.25……and only charged me £4.25…….I have to say substitutions rarely work out for me….
