Anyone made copycat costco mince pies?

As the title really, have you made sponge topped mince pies?

I made a frangipane topped mincemeat slice at weekend and its really nice but I think I'd rather have just sponge.



I've looked online and ppl seem to just do a basic vanilla sponge and use that.. now I don't know why but my vanilla sponges always seem a bit greasy and I've no idea why! Doesn't matter whether I use stork or butter.

Black coffee no sugar please! Being serious I do like cake and they look awesome. One thing I have never mastered is cooking cakes. They always end up burnt!

Frangipane is lovely but ground almonds are expensive! I need to get another jar of mincemeat too this weekend.

Keep trying with the cakes Mr TM. Maybe your oven runs too hot. And make sure middle not too near the top. Perhaps turn down a bit too.

Tbh I think I overbaked these a little bit but the recipe said 35 mins and they probably only needed about 25 or less.

If the sponge is greasy, it's usually from too much grease when lining the tin, always use butter but only a little 😉

Even when in liners so no greased tin. Its hard to explain its like when you look at it the crumb is a bit transparent greasy looking rather than pale and opaque maybe I'm bonkers lol. I have loads of great chocolate recipes but vanilla is yea not great.
