Yes, as others have said, you will definitely want to book for your dates. If anyone advises you not to, they’re probably basing it on quieter times of year. We arrived during term time last December, and called to book 60+ days in advance (ie 60 days in advance of our first day and 65 days in advance of our last day). Inventions only had limited slots left, and ADC was fully booked until our last day, 65 days in advance. We were able to book both, but had to take the days and times they had available, rather than picking our own.
Having said that, standard restaurants like Agrabah should be easy to book, even if you left them later. We like to have bookings in place, then we can easily ask about changing them once we’re there. There’s no penalty for cancelling a booking, so if you change your mind about times / restaurants, you can do it on the day. If they have something better available, that’s great. If not, at least you’ve got your original booking and are guaranteed somewhere to eat without queuing / being turned away. For timings, we like to have a big breakfast, and either book a restaurant in the park at 3pm, then have snacks later, or have snacks at lunchtime and eat in a hotel restaurant around 6-7pm. Sometimes that’s us done for the day. Other times, we’ll go back to the park until closing. (We take our children aged 5-10. They couldn’t stay up until 11pm every night, but can manage it once or twice, alternating with shorter days.) Bear in mind, you might only want to watch the parade / shows etc once or twice, so you could book different times each day to fit everything in. You won’t know the exact timings of all shows and parades until just before you go, although you can get a rough idea by looking at a current programme once the Christmas season starts. Maybe book for 6pm one day, but then 2-3pm another day, so you’re not eating and potentially missing the same thing at the same time every day.
