Thank you. Yes, I agree with your wife about the Xanthum Gum... Maybe I need to get some of the strong flour in. I'm just not getting bread to rise using regular GF flour.

Gluten free strawberry cake with double cream



Gluten free fruit buns which I made for DH because he doesn’t like strawberries ... only to find out he definitely does like strawberry cake lol!

Made gluten free scones today but as you can see they were a fail but DD's first attempt at empire biscuits turned out okay (was a g/f jammy dodgers recipe). Hubby did complain that compared to the non g/f were bit small but he can just eat a few at once ! Followed a recipe for the scones with Doves plain flour and baking powder but have found another recipe on glutenfreeblogger.com which will hopefully be more successful once I manage to get g/f self raising flour and find some xanthan gum.

you really do need the GF strong white bread flour if you want to make bread
The regular Gf self raising is fine for cakes and biscuits ect but I find they a tend to be crumblier than ones make with normal flour. You can often simply sub GF flour for the reg flour in most recipes though I know they often recommend adding additional liquid to gf bakes. I haven't quite cracked it yet though everything I've made has as been perfectly edible.

I made some really yummy Gf rock cakes using some alcohol soaked dried fruit I had left over from xmas last week - they were soo good but seriously crumbly

Yes, my sweet bakes have been fine when I've just subbed the flours (and a little extra liquid). Those rock cakes sound good!

Thank you, I'll definitely look for GF bread flour next time I'm at the shop - although I've found getting hold of GF products from the supermarket has been really difficult during lockdown. If any celiacs are struggling with this Doves Farm Freee have a special box they are doing at the moment. No ability to substitute anything but a good mix of products.
