I agree with the lentil tip - people never spot them in shepherds pie etc.
Ever since we started travelling more widely in Asia we use meat differently, more like a garnish or seasoning. For example, we love a bowl of ramen noodles, and we might have some thin slices of meat on top, but it is a garnish, not the main thing IYCWIM
We use a little chorizo or bacon to add flavour to dishes that are largely vegetarian - pasta bakes, cauliflower cheese etc
We love home made curry and find that tofu, squash or sweet potato work just as well as meat in curry.
If we have steak we will often share one, cooked beautifully and sliced on top of a huge salad...
My DH makes a lovely sausage casserole that is packed full of chickpeas and only a small amount of sausage.
I think that generally in the West, after the war and rationing, people started to expect large chunks of meat with every meal... instead of seeing it as a luxury or treat as we used to. This means that there is more poor quality meat around (supermarket chickens for £3 etc)
We would rather pay more For a corn fed free range chicken one in a while, than have water injected poor quality chicken every other day...

Thanks Tom. So easy to make - we swap the pastry for a wrap and egg wash the top. Cook the sausages, cut and mix with everything else, fill and close wrap and in oven for 20 mins

I’ve never used lentils. Do you use the dried ones and just throw them in? Or do you have to cook them first?

Dried little orange ones, chuck ‘em in, you will need more liquid as they absorb it. 😀

The lentil trick works everytime. I usually use a standard packet of 5%
fat mince with a large handful of dried red lentils, couple of grated carrots and what ever veg I've got spare and I can turn 1 pack of mince into 2 dinners for 4 of us.

Gets everyone eating plenty of veg and lentil are very healthy. I've never told the family that's what there eating though. They'd definitely moan.

I try to stick to £5 a day for meat or fish but one day that could be £2 on some tins of tuna for tuna pasta and the next day £8 on some frozen salmon. I also try some meatfree meals but inevitably these always ends up with lots of cheese being used x
