I love a recipe that takes minimal prep and needs no attention. This is our new favourite which I serve with either rice or noodles.

Sweet & Sour Fanta Chicken

Cook of the chicken strips
Add large chunks of onion till they start to soften
Add a can (330ml) diet fanta (or any other syn free diet fizzy orange drink)
3tbs passata
vegetable oxo cube
tsp vinegar
a shake of dried chilli flakes. How much chilli depends how zingy you like your food.
Add some peppers cut chunky
Let it simmer for around 20-30 minutes until it starts to thicken up
At the last minute add some pineapple chunks

Google Cajun chicken pasta it's so nice and you can adjust the amount of Cajun spice depending on how spicy you like your food
