I cannot answer your question but I do believe they don't celebrate Easter Monday as such. That may make a difference to how busy the parks are.

The year before the Monday and Tuesday were busier in all the parks. But as normal the Sunday was quietest (but still busy).

The weather at Easter impacts massively.

We went in 2016 (early Easter at end of March so was always going to be busy as it crossed with Spring Break crowds too) -
the Saturday was dead quiet - it poured down all afternoon/evening with occasional hailstone storms -
the Sunday was a beautiful day, "quiet" til lunchtime then shoulder-to-shoulder heaving.
The Monday was very, very busy because people had not been able to get out on the Saturday,
the Tuesday and Wednesday were absolutely stupidly heaving,
the Thursday was - relatively quieter, got quieter from then on - but was still very busy in real terms.

The following Tuesday was dead because of torrential rain all afternoon again.

I would have thought this changes from one Easter to the next, depending on whether Easter falls early or late in the year, and therefore whether it follows, or overlaps with, Spring break?

That'll tell you how busy the Easter period is. If Easter is early (eg. at the end of March) then it will be a busier period than if it's late. But it doesn't tell you which day will be busiest during the Easter period.

As SMAX says, surprisingly Easter Sunday is one of the quieter days of the period. Easter Saturday or Easter Monday tend to be busier. And, this year, the Monday and Tuesday beforehand was busier for most of the parks (although, tbh, the whole of the week before Easter was very busy). Generally, the week after Easter Sunday tends to be quieter than the week before Easter Sunday.

But as WhereIBelong says, the weather can have a big impact on crowd levels. And predicting the weather more than a couple of days beforehand is... difficult, at best.

Yes, so many variables make these predictions incredibly difficult (especially, as you point out, given the weather). Interestingly enough, looking at one of the crowd calendars for 2020, the Tuesday to Friday period before Easter is looking slightly less busy than both the preceding week and Easter weekend itself. My assumption, for planning purposes, is that it will be very busy. If it turns out less busy than that, bonus; if it turns out insanely busy, we'll adjust our plans accordingly.
