Have a look at Forever Florida. You can do a buggy ride and zip-lining.

I'll second De Leon Springs State Park, excellent day out and great value for money. $6 entry for a car with up to 4 people, boat ride is $14 each and well worth the money, saw a few gators, a turtle and lots of birds (an osprey took off from a tree branch beside us and it had a fish in its claws! ). Don't even get me started on the Old Spanish Sugar Mill, mmm pancakes galore, there was only two of us and we didn't manage to use the two jugs of pancake mix and I starved myself to go lol! Fab day out, didn't manage a swim in the spring due to a heavy rain shower but still had a great time, just make sure that if you enter the name into your sat nav that it directs you down the I4 heading for Daytona where you'll cut off for De Land. (We went on a mystery tour on the way there lol).

Its well worth a visit, we have been a couple of times now it is such a relaxing place and the pancakes are delicious. Its just nice sometimes to do something completely different and have a break from the parks

I have never seen clear water beach packed maybe busy.
Great day out many different boat trips you can do to see dolphins.
You can rent your own boat or jet ski
free entertainment in the evening down at pier 60 just give a tip to performers.
certain nights there is a movie on the beach
Parking is in short supply but if you know where you can even find free parking provided your there early enough
