May 2019 the one where we won't cram too much in

Hello all please see below my proposed trip plan I'd be grateful for your thoughts! Few points to note:
- We are going for 2 weeks from 18 May (13 Nights actually) staying at Rosen Inn at Pointe Orlando for most of it and last 3 nights at Portofino
- I know that MK/EPCOT are not recommended parks for our first couple of days but it just feels wrong not to do them first so we are braving the crowds
- The aim of this trip is to have a more relaxed pace, on our last trip we rushed about and never stopped and left ourselves feeling worse for wear. We are prioritizing our time which means no ADRs (they just aren't for us) and none of the kiddy rides (Peter Pan for instance). Instead of rushing to cram in rides/attractions/shows that we aren't particularly bothered about I hope to spend more time soaking up the atmosphere and stressing out about ticking every. single. thing. off.
Also side note I'm vegan so have made a note of my options which will hopefully avoid frantic google searches when hungry.

It’s great to have a plan, but don’t get too transfixed on it...if it can go wrong, it will.

Just stick to the plan loosely and go with the flow, above all, just have fun and enjoy yourself.

Personally I wouldn't say that was relaxed but if that's what your happy with go for it. As said above be prepared that things may need to change. We go 19th May and are having a relaxed one this time too xx
