We actually did a "Trainer for a Day" program with Dolphinaris. It was an absolute bargain for 10 am to 5pm including lunch. It was even cheaper because we booked ahead online. We went to the Playa del Carmen location but there are a few others as well. If you do the full day pay for the photo package on line. I didn't and ended up paying more at the end of the day. We had 300+ very good photos that I couldn't resist.

I also second the Xcaret recommendation. It is well worth the trip. You can do a dolphin swim there but I am sure you pay more for a short experience than we did for all day.

We have been to Cancun many times and last year we stayed at the Riu Caribe you will have a great time. it is best to book your trips before you go as you will get the best price going direct last year we did Xenses/Xel Ha and also the Dolphin Trainer for the day which was well worth the money we also purchased the photo package before we went which was great value for money.
