Burbank and car hire and rough itinery advice needed

Looking to going on our 1st trip in september next year for 14 nights. staying in Anaheim for 5 nights. A toss up between Fairfield Inn or Grand legacy at the park .There is just two of us and thinking of hiring a car for the 2nd part of our holiday picking it up at Anaheim and dropping it off at los angeles airport. Would like to know if this is what is what most people do? . Would like to do The Walt tour (Anaheim tour company) as this picks up from the hotel and is a full day tour and visits all the things on our list and ive included that day as part of our 5 nights, was thinking a 3 day hopper pass as it gives us 1 free day if we want to chill or change or make any other plans. Would a 3 day hopper pass really be enough?
We would like to go to universal and would like to know if we should hire our car from Anaheim and drive to Burbank and stay there a couple of nights after disney and have a look around there or stay in Anaheim and uber it and just do universal.
The 2nd part we were thinking of heading to the coast and its our wedding anniversary too. was thinking to san diego for a few nights and a night or 2 near laguna beach and finishing the night or 2 before our flight home near Santa Monica. Was thinking jamaica bay inn marina del ray.
Any hotel suggestions would also be appreciated.

Last summer we had a fab time in Anaheim (lovely new Hyatt House) for 5 nights. 5 day passes but the boys only did Disney for 3 or 4 days and saw a lot of not all.
We then hired a car in Anaheim before driving south to San Diego (awesome place). We then went east to Palm Springs and LV but came back into Burbank, stayed at the Hilton Garden Inn for Universal, Warner Bros etc.
We took car back to LAX too no problem.
Your suggested itinerary has you doubling back from Burbank (north LA) south to San Diego and then back north again. You may want to rejig to save some time?
