Sorry sorry sorry i know this comes up a lot but just wanted to check to be absolutely sure...

We are staying on site for the first 4 nights of our holiday (check in 4 April 19 and check out 8 April 19) so i understand i can begin booking fast passes for all of these dates when 64 days out on the 3rd Feb 2019.

We are then staying off site for another 10 nights. My question: am i then able to book fast passes for these dates from 60 days out, 1 day at a time? Or do i need to wait until 30 days out for these dates when I'm staying off site.

I think that 60 days before 4 April you can book fast passes for all your days onsight.
After that it is done on a daily basis 60 days out from each day.
Hope this makes sense.

You'll be able to book for your first 5 days, including check in and check out days, on 3rd February. After that you'll need to wait until 8th February and can then start booking your off-site ones I need a daily rolling basis (60 days before you plan to visit each park).

Thats great thank you for your reply. I thought that was the case but just wanted to double check. Alarm/alert now set for 3rd Feb.

Ive never done this before but at the moment, everything is linked on MDE... tickets, hotel and people added.

Will it all magically appear on the 8th? at the moment when i go in and look at FP it gives me the option of booking for 21 Feb (30 days from now) despite me not going until early April?

Yes, it will magically open up at 12pm on 3rd February for your onsite stay, then again on 8th February for your offsite stay. Until then, you'll be able to see 30 days from now.
