If you have not pre-purchased tickets as you turn into alton towers drop one of you party off so they can buy the tickets whilst you park.
As others have said if you can get to the park about 45 mins before opening then you will find it better. If you arrive 10am or later you will queue to get into the car park.
The offical opening is 10am- 9pm next week so I would arrive at 9am if possible. Don't forget 9pm is when then close the queue so join the queue just before.
Eating mid afternoon will mean you miss the food rush and also ride time may be down.
There are single rider lines on some rides (eg smiler), but they are not always open but worth checking.
When leaving if its park close time they sometimes open the exit just near air/galatica which brings you out in the car park and saves the long walk round.

I am a little nervous we my not be brave enough for the thrill rides, but excited to see!

One more question, do they still do all day drink bottles? Google is mixed results as nothing mentioned since about 2012 about refillable drinks

Yes they do all day soft drink refills for around £7 (if you want non-diet Coke you have to pay 20p per refill for the sugar tax).

They also do a hot drink refill mug for £5, but you have to pay £1 for each refill.
