Closing the Parks

We are going for Christmas and in the past have ALWAYS gone to the parks for opening. However we've always been bored/too tired by mid afternoon to stay for the fireworks.
So this year I have booked fastpasses for early evening in the hope that it will keep us going until the fireworks.
My questions is, how often do they shut the parks due to reaching capacity and will they let you in if you have a table reservation or fast passes booked?
I know we can leave and come back but wouldn't want to risk not getting back in the park later on.
Just trying to work out timings.
We'll be there for opening on Christmas Day in EPCOT but fancied doing just a couple of half days in the evening this time.

We've been going for years over Christmas and we've always got in, even arriving lunchtime on Christmas Day in MK and quite often late afternoon early evening.
