Yep we just use paxo made with water and rolled into balls then bake in oven.

2 large onions chopped
50g butter
50g pistachios roughly chopped
140g ready-to-eat dried apricot, chopped
175g fresh white breadcrumb
20g pack parsley chopped
finely grated zest of 1 lemon
1 eggbeaten
olive oil for drizzling

Fry onions in the butter. Stir in nuts; fry until golden. Remove from the heat, add apricots, breadcrumbs, parsley and lemon zest. Mix in the egg and season. Ball up.
Put the balls in a buttered baking dish, then drizzle with oil. Bake for 30 mins until golden, or roast them around the turkey.

I have made and eaten veggie sausage stuffing for years. I use quorn sausages which I grate then add onion, breadcrumbs etc. Tastes lovely and I have been known to give it to committed meat eaters and they didn't notice it was veggie.

Linda McCartney red onion and rosemary veggie sausages make nice stuffing. Just defrost them and mash them up, or slice them and they're almost like stuffing balls. I mix it through paxo to make it a bit meatier

my veggie daughter likes those wrapped in fake bacon for a joint pigs in blankets/stuffing alternative
