We've been on the Navigator from Rome and Independence from Southampton. The latter was the largest at the time but quickly overtaken. We were happy with both.

Check out Celebrity cruises, as well as the others, they have good teen clubs, (low key, more like a coffee shop/hang out area than rock climbing walls) and they have large accessible cabins that may suit your needs. Sounds like a great plan, and as others have said, would book early to get the best deal and cabin that suits you best. Have fun!
