Tenderising steak

I thought I would have a go at trying to tenderise the ranch steak we are having for dinner. Does anyone have a recipe for this that does not have flavouring in it, like Worcestershire sauce, pineapple etc. I just want to eat a tender juicy non-flavoured steak!

cant really help with ranch steak, i've never had that cut before, and googling it doesnt really sell me on ever buying it...

get a good thick ribeye or two from your local butcher. use the reverse sear method in a cast iron skillet. you need a bit of kit to do it, but it'll be the best steak you'll ever have.

you'll need to a sheet pan and wire rack to store the steaks in the fridge for the night to dry age, then a remote probe thermometer (with two probes ideally so you can measure the internal temps of both steaks)

(prices start from about £8 for these but i can vouch for this particular one)

then you'll need a cast iron skillet to finish it. one of these will last a lifetime if treated well.

method:

Salt steak (1tsp per side). Stick uncovered in fridge on rack for 8-10 hours.


Preheat 250f oven (gas mk 1)
Pizza stone on base
Insert tray with rack and steak on.

Remote Probe set to 120f cook for about an hour till reaches temperature
Rest for 10 mins. Do not remove probe

heat skillet up to 600f (approx 10 mins so do this while steak is resting). If a teaspoon of water evaporates in 5secs or less it is ready.

Oil steak minimally. Remove probe. Sear for 45 seconds on each side.

I assume this is a fairly thin cut. It's too late to marinade so don't cook past medium rare otherwise it will probably be like an old boot.

It is seldom worth buying these cheap cuts.

I used too much salt. Otherwise it would have been very nice. I will try again. This is the only way we can afford steak. Normally I would not buy it but thought I would give it a try.

I buy rib eye from Aldi ,yet to get a disappointing one , far better than Sainsbury's and a much better price.

I recommend Aldi steak too. We buy rib-eye and then DH bashes it with a rolling pin, it's always lovely. Only costs about £3.50 and we often share a piece as they are quite a good size.
