Totally foolproof this one. Light and fluffy everytime. Don't cook more than one in each pan at a time gently mix the mixture just to combine and use straight away.

I used to like the krusteaz mix from Costco but now it leaves an aftertaste with me.

Recently i have discovered protein pancake mix from home bargains. It’s £1.99 a box and get you get three sachets each sachet you add 100ml milk and one egg and a sachet makes 4 pancakes, really tasty .

Agree the bags are huge and last forever and so easy my 11 year old makes them every weekend. Light fluffy American pancakes just perfect.

I've seen a lot of people flatten their pancakes with the spatula. Never do this as it knocks the air out. You'll know when it's ready to flip as there'll be small bubbles all over.

We also use the Krusteaz and Ghiradelli mixes from Costco. The Ghiradelli doesn’t last long enough - or we eat it too quickly, but the pancake mix seems to last forever and both are always perfect.
