The passion fruit Victoria sponge went down a treat but my nieces husband said “nah you’ve gone all fancy should be strawberry jam!” 😂😂😂
The giant bourbons for ice cream sandwiches were a disappointment. Pretty bland and a faff to assemble without block ice cream. Won’t buy those again.

The Victoria sponge is on Kookieskakerycakeschool. It’s got buttermilk and a mix of stork & butter. You add an extra egg yolk to the mixture. I used good quality vanilla bean paste rather than extract. It’s definitely now my go to Victoria sponge.

That is such wonderful feedback about your fancy sponge! 🤩 You can’t always please everyone all of the time, you might have to make the next one with strawberry jam! 😉

Oh no, that is disappointing to hear about the Bourbon Biscuits but I appreciate the update. Maybe it’s more of a novelty thing? Xx

Raspberry and Coconut Slice.

Our sweet treat this week is a super simple Raspberry Jam and Coconut Slice. It was quite quick to make and I only made 1 change, I didn’t have enough coconut left so I substituted some toasted flaked almonds to make up the correct amount. It added a lovely crunch so I was happy with the end result!






I placed the dry ingredients for the shortbread base into a bowl.

Then added the melted butter and mixed.

It was quite a sandy texture.

I then pressed it into a lined baking dish and popped it into the oven for 10 minutes.


Whilst that was in the oven, I made up the topping mixture. I whisked the egg, sugar and vanilla in a bowl.

This was the moment I realised I didn’t have enough coconut so I added the sliced, toasted almonds as well.


Once the base was ready, I took it out of the oven and added the jam. You can do this whilst the slice is still warm.

Then topped with the egg/coconut and almond mixture. I popped it back into the over for a further 15 minutes. They do say keep a close eye after 10 minutes and monitor if it needs less time.



You need to let it cool completely before cutting into slices.


This was very tasty and simple to make. 😍 I think next time I would add more jam as we liked the sharpness of the raspberry jam with the sweetness of the coconut.

I make the raspberry coconut slice an old old recipe of my grandmothers but i drizzle melted very dark chocolate over it
I’m sure it was a womens institute one
