1night stop between SF & Anaheim

We are in the early stages of planning a summer 2016 trip with 2 teenagers (18 & 15). Rather than flying SF to LA looking at driving with 1 night stopover. Husband doesn't like driving on cliff edges (he's a nightmare on ski holidays! ) so hoping to use 101 more inland & faster route & popping to the coast for views from time to time. Is this practical & where us a good half way stop over point. Kids saw lots of European ancient monuments, cathedrals etc last year so have agreed this year it's less of a cultural holiday! Basic itinerary is SF, Anaheim, San Diego & LA. Any help or advice would be much appreciated

I would follow route 1, we did it last year and there aren't that many parts that are 'cliff edge', I mean you can see the water but your not right on top of it most of the time.

If you go down that route, Pismo Beach is a nice stop off, the Lighthouse Suites were very nice and the sunset on the beach was beautiful.

I so want to do this abi managed to sneak an extra night in so we are at 17 nights now (3 nights san fran/ 4 nights Disney/ 5 nights Hollywood/ 5 nights Vegas) but I'm trying to convince hubby to ditch a night in Vegas and stay at lighthouse suites between SF and LA, will make me feel slightly better that we aren't doing 3 weeks and I'm only missing out on Yosemite and San Diego- I think next time we will have to start at Napa Valley

It sounds like an amazing trip, we did similar in 2014 but had Yosemite & San Diego instead of Vegas & had only 2 nights in Hollywood. Its such an adventure!
