Think it has to be double cream because of the fat content but as you can use soda water as opposed to lemonade, which would not have the same sugar content, guess diet lemonade might work. We roll them out as we would for normal scones and make sure we do not twist the cutter as we cut them out as that can lead to uneven rise.

anyone know if has to be real double cream or Elmlea lower fat double as got some in the fridge!

Elmlea is a mixture of buttlermilk and an oil so not sure how it will work.
