what is the weather like in Vegas and California late Nov/ Early Dec? do you need to pack jackets?

Californian is a huge State - you may well find snow in some places in Dec as well as warm beaches so depends on here exactly . EG Palm Springs you may need a light jacket in the evening (I wouldnt tho) but not during the day as it will be shorts and TSHirt weather

Warm during the day (but could well have odd rain showers and its not warm rain like Florida but generally doesn�t last long - people in LA are not used to driving in rain lol ) but chilly evenings so jacket for that and long pants . Really not bad at all
