That's the plan should we need to do it. We have booked the hand luggage only flight with Virgin and leave in 6 weeks.
It just remains to be seen if we can fit everything into the hand luggage or need to add another bag.
We always intended to bring another bag on the return flight.

We travel with just a cabin case, and a small rucksack (used as a handbag). Buy our toiletries in supermarket when we get there.
Coming back I add a suitcase to the booking to go in the hold

we're doing that but managed to bump up to wtp for way home and only £50 more (although we had to take a flight leaving 1 hour earlier!)

the main difference is you get the extra bag allowance and it's cheaper than paying for an extra bag - room for all the cheetos now

We have one of these, bought from Wilko for £10. My DH uses it as the 'personal item' on the way out, then unzip at the airport and chuck travelling jackets and the kids' bumbags in it. Full of shopping on the way back!

Yes, suitcase or some sort of hold-all, usually from Walmart, or the outlets etc
I have a really bad record with suitcases in the hold, so inevitably end up buying a new bag every time I travel.
