Sort of last minute May 2019 week long plan

I only booked a few days ago and now have one of the shortest countdowns ever! 2A and 2C for one week Man-SFB staying at Rosen at Pointe.

Total spent so far: £1260 package with Tui, £30 family railcard, £46 return train to Manchester, £32 Travelodge, $54 estas, £60 plus avios one night at Cabana Bay (possibly booking a second using AP discount).
We have Universal two park annual passes, insurance, passports etc already.
No plans at the moment for other parks but that might change ;P
No car either at the moment but we may add one on/ or book for a day or two.

Plan so far:

7/5: train from Glasgow to Manchester Airport then taxi/train to Travelodge Stockport
8/5: taxi back to airport in the am fly to Sanford
shuttle (car?) to Rosen at Pointe. Dinner at Pointe (possibly Dave and Buster's for the kids) and a play in the pool.
9/5: IoA/US. Eat at Leaky Cauldron?
10/5: not sure as its grad venture at Universal so the park closes early. Might do outlets at some point this day? Or VB? Or disney springs/water park? Chuck e Cheese/cicis?
11/5: check in to Cabana Bay: time at the pool, some time in the parks, evening at hotel
12/5: possibly booking a second night at CB using my AP discount but we'll make use of early entry to HP this day then hotel pool etc again
13/5: later start to parks/hotel pool. Bahama Breeze for dinner?
14/5: more park days/shopping? Disney Springs?
15/5: pool at rosen in the am? home
16/5: train back to Glasgow then sleep!

Let me know what you think. It's been a while since we've been without a car and we're struggling at the thought of no Disney but this is a bonus bargain trip so overall just happy to be heading back!
