I stir fry tofu with lots of salt, pepper and garlic (and other seasonings depending on what Iím adding it to) until it gets crispy then I add it to stir fryís, curryís, salads, fajitas etc. Tofu is really versatile but does need a lot of seasoning. My favourite Iíve tried is from The Tofoo Co which you can buy from Tesco and Sainsburyís. Itís already firm and doesnít need pressing.

Tofu and broccoli teriyaki is something I make a lot...

Make a basic teriyaki sauce which includes sugar, soy sauce, garlic, ginger and cornflour. Sometimes I add maple syrup. Simmer everything until it thickens.

Fry the tofu until crispy, add the broccoli, add the sauce, plate it up and sprinkle on some sesame seeds 😍

Vegan since January - my husband is 100% and I sometimes can't resist the temptation of sweets/desserts/bakery/icecream type stuff. :X After visiting Erin McKenna's Bakery in Disney Springs, I actually bought all her cook books as ebooks online, and have been enjoying recreating some of her recipes - the blueberry muffins are a favorite in our house and SO quick and easy to make!

I'm not vegan, however I made these recipes for veganuary. I'd recommend; the coconut Dahl from Deliciously Ella. It is a favourite for all members of the family.

I also use the "like meat" nuggets if I'm doing chinese style sweet and sour etc.

I'm vegetarian, rather than vegan, but I do try to substitute a lot of my dairy products where I can. If you're on instagram I highly recommend following 'theadventurousvegan'

She is from NI and has her own cookbook (which I own and it's fantastic), and she posts the most amazing photos of the food she makes. I really recommend checking her out for new ideas!

As for my own suggestions... I love mexican food and we regularly make tacos with mince, black beans, chopped tomatoes, taco seasoning, guacamole, and then cheese and some kind of sauce (which you can choose yourself as a vegan sub). Also nachos with a topping of mince, refried beans, chopped tomatoes, seasoning and then cheese! We usually make enough for 4 portions and have half on nachos, and half on homemade chips

Pinch of nom have a carrot & butter bean soup recipe which I love for lunches, and is really tasty and filling.

Pea Risotto, you can get plant based parmesan for that in tesco, with some roasted asparagus on the side.

Homemade sweet potato fries, with chicken pieces in bbq seasoning, with edamame and tahini sauce on top

Falafel in a wrap or pitta with salad and tahnini

Currently loving porridge with protein chocolate soya milk and blueberries, or baked oats (another pinch of nom recipe).

I'm making myself hungry...
