It’s a pint of double cream, one vanilla pod, 50g of caster sugar 6 egg yolks and 2 slightly heaped teaspoons of cornflour.
Mix the sugar and cornflour together in a large bowl with the egg yolks and the seeds from the pod. Bring the cream to just below boiling point along with the scraped out pod and then slowly pour into the egg mix whilst whisking. Once it’s all in, pour the whole lot back into the saucepan and bring to the boil gently whilst whisking. Tip into a shallow bowl and cover the surface with clingfilm so it can’t form a skin and refrigerate. I leave it overnight and it’s perfect for adding to the trifle by morning *I don’t discard the pod until I use the custard Edited at 04:39 PM. |

Steak seems to be my skill. So much so that my lot won't eat it at a restaurant any more because its not as nice.
Just sirloin, tescos own will do, oiled, sprinkled with salt and pepper, cooked in a very hot frying pan for a couple of minutes each side. Throw in some butter to deglaze the pan. Put on a warm plate and leave to rest... Done...medium rare. |

My signature dish would depend on who you ask. Son no 1 would say Somerset Pie, son no 2 would say lasagne, daughter would say chicken parmigiana and DH would say a crust less quiche. I’m just pleased they all enjoy my cooking 😀

Depending on which family member you asked.
Ex husband loved my seafood risotto DD loves carbonara DS loves roast chicken dinner Mother loves my chocolate trifle Dad probably my cherry scones. DH now loves anything lol.
