What can I do with mascarpone?

I had it delivered instead of ricotta - any favourites to share or suggestions on what I could use it for - I have 2 tubs.

I have a macaroni cheese receipe that has about 60g of mascarpone added, to a cheese sauce with egg yokes, and whipped egg whites (2 eggs). makes a nice fluffy rich macaroni. I sometimes add sweetcorn and or pieces of ham in before baking it for half an hour. macaroni preboilled and added in with the sauce, before baking.

Also make baked hot cheesecakes as well as cold ones.

You can use it to "enrichen" a tomato sauce to have with pasta for example - fry off an onion, garlic clove, tin of chopped tomatoes - you can season as you like or add basil to taste - then use the marscapone to make the sauce "creamy"
