Anyone make macaroons?
I mean the fancy afternoon tea type ones, not the coconut type. My daughter has decided to make these for her cookery exam in January. She has to prepare a 2 course afternoon tea in 2 hours.
Is she taking on too much with the macaroons? She wants to do 3 different flavours. I have just googled a recipe that said to rest them for an hour before baking! Her other item is mini quiches |

I do and they can be very temperamental I'd stay away from them if it's an exam to be honest

i agree with Gryff they aren't the easiest plus they need time to cool, maybe profiteroles they show technique and she can adjust the flavours.

They are easier in an oven with out a fan and they really do need to cool before you handel
them I was going to suggest eclairs |

I bake a lot and profiteroles , pavlovas , sponges come out great ... thought macarons would be ok but I have tried 3 times and although improving I haven't mastered them yet
Quite expensive too due to ground almonds so I think choux based and perhaps mini meringues would look fab |

I would also avoid them as they can be a bit hit or miss. Eclairs are good.

Macarons are the ones you’re thinking of . Tried them once but was way too much hard work
What about mini fruit tarts ? Edited at 02:25 PM. |

I would definitely not recommend them for an exam. Too much to go wrong!

Thank you for your replies. I don't think my DD has put any thought into this beyond ' they look nice'
I will encourage her to have a trial run with a few different items over the Christmas holidays. A few of you have said Eclairs. We'll give those a try l think too. Although on The bake off they seemed fiddly. |

I find profiteroles / eclairs easy and have had some success with macarons but as others have said they can be temperamental... what about mini sponge cakes...
