Depending on how many times you've been before and the ages in your group, it may prove better to plan days where you do a park in the morning, retreat to the hotel to chill and then head out again later for an evening out including dinner.

For dinner etc at Epcot from OKW, I'd get an Uber for a few dollars to the Beach Club and then just wander through the hotel and the International Gateway. Either reverse the trip to get "home" or take the Disney bus from out the front of Epcot.

Uber is your friend to make popping out for dinner, be it at a park or a resort, quick and easy.

Funny, I only have one meal scheduled in Epcot! But I have the same problem with AK/AKL, have it scheduled in on three different days and still only going half the places I want to.
