Light and fluffy pancakes... I can’t do it!

Hi there,

I would love to master the art of big, American style pancakes. Does anyone have a fool proof recipe and method that works every time? I have a Le Crueset griddle (so I look quite professional haha) but I’ve tried different recipes and they always seem to be a bit heavy and stodgy rather than light and fluffy. What am I doing wrong?

Are you using buttermilk? DH makes them, in a frying pan and they are delicious. Not sure what receipe if any he uses.

Nigella’s seems to be a good recipe.
DS always likes those.
I agree, some are horrible and rubbery

Add some bicarbonate of soda and white vinegar, that helps them rise.

I do not have a recipe with exact measures, I just gauge the consistency. Two eggs, self rising flour and milk, three/four tablespoons of sugar, heaped teaspoon ofbicarbonate of soda and a few dashes of white vinegar You want it to be like double cream.

Make one wee pancake and adjust your ingredients to suit. I like to add some dark brown sugar.

Pancakes are a pain to get right. My children adhere to the belief that any pancake is great with Nutella.

also I split the eggs and whisk the egg whites fluffy before adding them.

No I’ve not used buttermilk MinniMouse,... but that sounds like a nice idea

Haha it’s syrup that mine like, and they always eat them up...but I know the texture is not right! My revipe doesn’t have bicarb or vinegar so will give that a go thanks,

Do you have a Costco near you ?

If you do, the Krusteaz Buttermilk pancake mix takes all the hassle out of making them and they are right every time.

I make these all the time using a good old Dairy Home Cookbook recipe -8oz Plain flour, 4 tsp baking powder, good pinch of salt, 12oz milk, 2 eggs, some vanilla extract and then whisk, melt butter (not oil) in pan, and cook until you see bubbles on the top, then flip. They work every time.

I do have a Costco reasonably nearby, if I try out the other tips and still fail I will look out for this, thank you. I gave up making my own brownies once I tried the ghiradelli brownie mix from Costco... they are just lovely!
