Uber from the parks gates

If you want an uber or lyft when the parks close and its mad busy are you best to make your way to the front of the nearest disney Hotel and arrange pickup from there

Definitely in the case of MK. Walk to the CR for sure.

For mk I always go to the contemporary and for Epcot and Hollywood studios I go to the boardwalk or beach club , it’s harder for animal kingdom so either hope in the animal kingdom bus or order an uber as they can get quite close to the enterance of the park

We've never had a problem getting an Uber from right outside the main entrance to parks. Obvious exception is MK where you'd either got to the DTC or one of the hotels within walking distance.

Normally the pickup point is close to where the taxi's are. We've left MK at midnight before and UBER still comes in within 10-15 minutes.

I'd say that there's 2 answers:
1. As Uber/Lyft are pre-booked then it's going to make little to no difference, in all likelihood the drivers are "fishing" in the same pond.
2. Traffic wise will it be quicker, Possibly but especially at MK you still have the bottlenecks that affect the roads around MK.

Uber/Lyft have dedicated driver waiting areas for all parks, so you're more likely to have a queue of cars ready for pickups at closing time compared to a resort. So I wouldn't bother heading to a resort over the park Uber area, I don't think there'll be much in it.

Exception would be MK as people have mentioned, since they can only pick up from the TTC. So I would probably walk to Contemporary rather than transfer across.
