fool proof cupcakes?
ok so I have been roped into making some cupcakes for an upcoming school event(they have to be homemade) and my cake making skill are a little rusty
Anyone have a fool proof cupcake recipe for something a little more interesting than vanilla/choc and that won't cost a fortune to make. Many thanks in advance |

Hi
Lemon Cup Cakes are a firm favourite in my house 225g S/R Flour 225g Butter/stork 225g Caster sugar 4 eggs 2 Lemons (zest and juice to taste) 1 tsb baking powder Dash of milk With a whisk Cream butter and add sugar a bit at a time Whisk 4 eggs in a jug and add to the mix a bit at a time along with a spoonful of flour after each addition of egg Add lemon zest and juice to taste (not too much as you will get a runny mixture) Sift and fold flour into mixture gradually Add baking powder Add dash of milk Whisk together the Mix for about 1 minute Add to cup cases and bake on gas mark 5 for around 15/20 mins or until cooked Top with Lemon buttercream and decorate |

DH makes delicious carrot cake cupcakes. He uses the hummingbird bakery recipe, if you google it lots of people have put it online.

I’d also suggest lemon cupcakes.
If they’re not going to be hanging around long before being eaten then you could fill them with lemon curd, top with meringue frosting and blowtorch them. Alternatively for school cafe I used to make chocolate cupcakes with caramel buttercream and then top with slices of fudge finger. They were always popular.

My daughter and her friends like rainbow cupcakes - just colour your cake batter with food colouring and put a little of each colour in the cake case
