Have a read of Bozza's trip report if you haven't already as he went on a solo trip without his family albeit for longer than you have and not work related but may give you some ideas

As a solo adult you have the freedom to do absolutely anything at all, not just everything couples, groups, families do, but also everything you can't do with kids. I'd forget the Disney parks, which you do on other visits, and look at adult-orientated things outside. There are hundreds of possibilities - depends on your interests.
Revolution off-road, air boat ride, tours at Orlando Brewing and Lakeridge Winery, Daytona International Speedway tour, basketball or ice hockey games, concerts at various venues (House of Blues, Hard Rock, Amway Center, Amalie Arena, etc), comedy club in Orlando downtown, Blue Man Group, KSC, Fantasy of Flight museum, lakeside walks, etc
You haven't enough time to fit it all in!

I just came back from 6 days in Orlando solo and I can't recommend highly enough the Blue Man Group. Look on it as a time to do your thing at your pace. I did some early starts and some late ones. I like sitting with a coffee in DS (or an adult beverage in the evenings) just chilling out and reading my kindle while people watching/listening to live music.
Do your favourite rides multiple times :-) especially if they have a solo rider option. Go to the Gulf coast for the day - I did that in a previous trip and would like to go back.

I think the live music is a good shout. ENjoyed doing that in New Orleans.

I did blue man in the summer. It was great.

I'd love to go to the gulf coast, but it probably won't be warm enough, or will it?

So many decisions.
