Walmart having hiking poles in their sports area, we ended up showing a picture of what we wanted!
If they are adjustable the top of the stick should be level with the hip bone to be the most helpful.

Thanks for the tips. In the end I ordered one from Walmart online and picked up the next day.

Went for a big base one as her biggest fear was of falling if the cane went from under her so I got the most sturdy one I could find. Gave it to her on Saturday and she loved it! If for nothing else, the confidence it gave.
