And i've found apart from PF Changs there aren't that many nice chinese places about.
At the end of the day it's your wedding so pick where you like and i'm sure they can be accommodated.

It's your wedding meal, what do YOU want to eat? I think you might be giving them too much say (give them an inch and they take a mile ) and they're voicing their favourites, even though it's not really the occasion for their favourites! They could probably find something they'd eat on most, but the smallest/most specialist menus. Maybe you should be opting for your favourite at this one meal?

...Or a buffet?

Yes. She lives off gammon here. She probably won't kick up a stink, but I'd rather try and get somewhere she might eat. I've already told her they don't have Chinese like here. It's her first time in USA.

Well said. I think I feel this deep down, but I was trying to please everyone. Trying to find somewhere that's had a mixed menu. Steak, fish, chicken etc.

It's not going to happen, I realise that now

The problem with trying to please everyone is ...you can't! And it is YOUR wedding.

Also, the more you try to avoid problems the more your mind is focused on those problems and you end up missing out on the fun.

If you could name three possible restaurants that you'd love to choose (and everyone else would agree regardless) - what would those three be?

How very true. I just want it to be as special for them, as it is for us. My favourite 3 would be Chilis, Senor Frog & hooters ( we don't get out much lol) We went to Fultons and hated it.
