Arrow winter veg inspiration needed

As most stores are doing really cheap veg ahead of xmas I was thinking now would be a good time to try some new ideas and make things a bit more interesting.
Any suggestions appreciated

Roasted veg greek salad
Veggie bean burgers

I’ve just made vegetable soup a good vegetable stock I use a low salt
Bullion
Leek carrot swede ( or turnip as we call it ) parsnip and celery cook in stock till
Soft then with a stick blender purée to desired thickness season to taste
Often make a root veg version of cottage pie as well
Roast root veg or just chilli
We do eat a lot of veg

If you’re doing Brussels at all I’d recommend doing them with pine nuts, creme fresh, a little lemon juice and bacon/pancetta. Then mash them up a bit! My favourite way to have them☺️

Baked leeks in cheese sauce is one of my favourites. Usually add Stilton if serving with Xmas dinner
