Definitely Maldives or Mauritius.
I've been to Maldives which was absolute paradise, and have friends that have done Mauritius which looks amazing.

I have several friends who've been to Bali and it doesn't appeal to me.

What sort of accomodation did you stay in, thinking of a beach bungalow straight onto the beach ?

I'd be bored stiff in the Maldives or Mauritius just sat on a beach all day, have been to Bali and that was great.
We did a split stay in Ubud and Seminyak.

We’ve been to Bali and it was lovely. We did a stopover in Bangkok for a few nights on the way out. We stayed in Sanur which was pretty relaxed but not too far from Kuta if you wanted more nightlife.
We did a few trips whilst we were there which was worthwhile

I have been to all 3. Mauritius is my favourite followed by Bali and then the Maldives. As with most places, a lot depends on where you stay. In Bali, we avoided the big towns and cities although we did go into Ubud. I would certainly avoid Kuta and probably Seminyak. Second half of our stay was Nusa Dua which was beautiful and totally unspoilt
I have no plans to return to The Maldives but would love to go back to the other 2

Maldives definitely! No where I’ve been compared to it
Mauritius is beautiful with some great hotels but the Maldives is a completely different experience

Haven’t been to Bali but sold it a lot - people tended to chose it if on a tighter budget or for weddings
Didn’t get the repeat visit like the other two

My wife won our honeymoon and it was ‘Le Tousserok’ in Mauritius. This might suit you down to the ground.

Our chalet opened on to the beach, a lovely lagoon (but with the endemic Sea Urchins ).

They have their own private Island with free use of Sit ons, Hobie Cats, Snorkelling Equipment etc. It even has a Golf Course.

It is pure, unfettered luxury! Well worth a look and the food was excellent.
