We did this with BA. It was very easy and much cheaper than direct. We also added the New York hotel which made it a package with a deposit option.

No, you do customs/immigration at your first entry point into the US. You arrive at MCO as a domestic passenger.

We’ve done this a couple of times now once with virgin/delta and other time with BA/AA as a fly drive (car hire in Orlando). Often works out the same price as a normal indirect flight (and far cheaper than a direct Orlando flight) so we get the New York stopover for the just the cost of the hotel. It’s always been booked on one ticket and we’ve always had full luggage allowance included for all flights.

if the layover is a few days then the added bonus is that you arrive adjusted more for the time difference, so you can get an early flight out of NY and hit orlando running.
