As Tim said himself at the beginning of the video, it was a US holiday weekend (Martin Luther King Day) this weekend and hence why the parks were more crowded. It's a bit like how places are busy on a bank holiday weekend here in the UK.
Early February before President's Day weekend (15th to 18th Feb) should be relatively quiet. Not quiet compared to UK theme parks, but quieter than other times of year at the Florida theme parks. However, if you are there over President's Day weekend then expect it to be busy.

We used to go late Jan/Early Feb every year and it was very quiet. I understand this has now all changed. The only problem we used to have was the gangs of South American school kids that just barge into the queues (what little queues there were). Other than that is was very pleasant. No queues over 5 minutes on most rides and 40 minutes max at peak times for the most popular (excluding TSM which used to get queues over an hour - so I've never done this ride as I refused to waste my day in a queue).
