Any suggestions for Veterans Day?

We are in Orlando when Veterans Day takes place - the plan is to avoid the parks and crowds (Disney and Universal) but we're looking for something to do to fill in the day. We will be hopefully having dinner at Ohana that night so we don't want to venture out too far. I was looking at the Kennedy Space Centre or Gatorland as I think my dad would like those but no idea how far they are from Disney (we are staying onsite), whether we'd need a hire car to visit either or if we can get an Uber, whether these would be busy or whether it's just worth staying at the resort or looking around the different resorts for the day? Me and my dad aren't huge shoppers so we wouldn't want to go to the Mall or anything.

Any suggestions and advice extremely appreciated!

Universal was practically deserted on Veterans Day when we went.
