South Beach is fine but if you want a really great beach then head to Crandon Park Beach on Key Biscayne and Bill Baggs State Park where they give tours of the lighthouse (fabulous views out over the bay) and the lighthouse keeper's cottage.

Not far from the Everglades there, head for florida city/ Homestead and then follow the signs, there is a visitor centre there to learn about the history of the Everglades and the measures to protect it, you can then follow the road to different areas to se the wildlife up close - it is not unusual to see an alligator basking on the grass verge or if you're lucky you'll come across one crossing the road. You can also go along alligator alley which has a visitor centre and bike rentals where you can cycle a 7.5 mile route through the swamp (tram tours are available if you don't want to cycle).
From Florida city it's a short drive to Key Largo and the John Pennenkamp underwater state park where you can snorkel or dive in crystal clear waters which is as warm as a bath! Sorry to sound like a tour guide trying to sell it to you but it's one area I really like visiting when I am there
