Gravy make ahead?

So all set to make gravy today and put in freezer until big day except one question. I have been unable to find free range chicken wings (I don't buy non free range since watching a river cottage programme a few years ago) i got a mix of free range thighs and drumsticks. Thinking of using in place of wings will that work? Do you think I use both or just the drumsticks ( in which case I may not have enough!).

I would cook them in the gravy-making-tray, strip off some the meat and use it for lunch, leave the skin, bones and a good bit of meat in the pot and use that with the cooking juices as a base to make the gravy

Ok thanks the thighs have a lot of meat on so think I will do as you suggest and give to DS to eat but leave bones in tray for gravy making x

Oh I must be such a mean Scot we had roast chicken yesterday
I used the carcass for stock for soup and reserved some for gravy for the big day

I did that too but the main reason I thought of it was it was a safe and onion stuffed chicken from Lidl and I thought it would make a nicer flavour.

I do the Jamie Oliver gravy with chicken wings or drumsticks. I add a few root veg too. I have the chicken as a meal for me, gravy is frozen ahead. I make enough to put in a few portion sized tubs.
