So I asked Tom Kerridge...
How to cook my rib of beef... was at the Good Food show in Birmingham a few weeks back and Tom came into the subscribers lounge for a question and answer session, and I asked him how to cook my rib of beef, he said to put it in the oven on a very low heat for 2 or 3 hours whilst we have a drink or two, check the temperature of the meat (around 58-60C for medium rare) then as the colour won’t look good sear in a frying pan before carving and serving...
Seemed a bit odd to me but hey ho try it and see... and it was absolutely gorgeous, the best beef we’ve ever had... and a new way learnt for me... who says you can’t teach old dogs new tricks... Anyone else learnt anything new this year?

Did my mash on Christmas Eve with a hand whisk...then reheated in microwave with a little double cream added. It was divine. That’s definitely the way forward now!

My roast potatoes were divine yesterday. I par boiled them the day before, put in a freezer bag, shook them up and then froze them overnight. Following day roasted as I normally do in goose fat, and the texture was perfect.

I think mine would be potato related too. Yesterday I added baking powder to them a la Nadiya and they were the best I’ve ever made. Could just be a coincidence

I always cook my turkey/chicken upside down, ie with breast at the bottom.
My dad always moaned that his turkey was dry, wondered what would happen if I tried it that way. Never looked back. Best gravy is made with veg water in particular carrots and swede.
